This research project aims to determine the composition of certain commercially important fish species so that fish content declarations made on fish products can be made with confidence.

A Code of Practice on the declaration and labelling of fish content in fish product has been written with respect to the relevant legislation. The Code contains interim nitrogen factors for fish ingredients (used to determine fish content) that do not account for variables during processing. Accurate up-to-date nitrogen factors are crucial for the calculation of the fish content of fish products. A collaborative study to determine the composition of certain commercially important fish species is required so that both the trade and enforcement side can have confidence in fish content declarations made on fish products. This can support official food enforcement, particularly with respect to correct labelling.
