Illegal Meat Guidance Notes England

This guidance provides advice on all aspects concerning the production and sale of illegal meat including identifying the correct legislation.

It also brings together several other guidance notes previously issued by the Agency on a variety of issues relating to the requirements for the production of meat for human consumption, such as cutting up of meat by butchers; private slaughter; smokies and Specificed Risk Material (SRM) and other BSE controls.

While compiling this guidance, the Agency consulted key stakeholders, including the Local Authorities Coordinators of Regulatory Services (LACORS) and the Chartered Institute of Environmental Health (CIEH).
